Peanut butter and chocolate are one of the world’s greatest food combinations, right? You probably mainly eat it for dessert, as in things like this pie. With these muffins you can enjoy them for breakfast. So you can get your peanut butter and chocolate fix first thing in the morning! This recipe is easy. No mixer required. Just 2 bowls, a spoon and some arm power for stirring.

These muffins are large. You fill the muffin cups all the way to the top so that you get a nice large dome, reminiscent of something you would find at your local bakery or coffee shop. The peanut butter is is not overwhelming while the muffin itself is not overly sweet. It is a nice way to begin your day. Or perfect for your afternoon with a cup of tea or coffee.

Carne Asada | Kathy's Kitchen Table My son was ecstatic when I told him we were having Carne Asada for dinner. Well, actually he looked at me like I was crazy and not really speaking English (which I wasn’t). I told him it was basically like a taco. He loves tacos. It’s probably right up there with spaghetti and pizza. So I told him it was like a taco, just with a different kind of meat. He was perfectly content with that description. Stephen celebrated his 5th birthday last week! It’s hard to believe, and yet it isn’t. Have you ever heard the saying, “the days are long but the years are short?” So true! I know a meal is good when my son is still talking about it at bedtime. And when he is asking for me to make it for dinner the next night. This meal is one of those meals. I had no idea how it would go over when I made it, but to my surprise, Stephen ate everything that was in it and Emma ate a few of the vegetables and the rice. I have made it several times and each time it is met when great enthusiasm! Which is good, because sometimes my children change their tastes in a matter of just a few days. Decadent brownies, Oreo’s, and ganache are three of my favorite things. What do you get when you combine those three? Oreo Truffle Brownies, of course! These brownies are not for the faint of heart. They are serious stuff. I love brownies, but anytime I have a chance to fancy them up and add layers to them, I am all for that. These brownies are easy to prepare, although they do take some time to put together. They are best cold. But, I may be partial as I love cold desserts. And they have a layer of ganache on top of them. Have I mentioned that I adore ganache? It sounds so fancy, but yet it is so easy to prepare!

Let’s start Monday out right and talk about Mexican food, shall we? I’m sure by now you have probably gathered that we love Mexican food. You can see examples of that here, here, here and here. Mexican flavors are so versatile. Sometimes I think I could eat Mexican food everyday of the week and not get tired of it. There are so many different ways you can fix it. These Honey Lime Enchiladas are the perfect example! This flavor combination will absolutely knock your socks off! You won’t be able to stop thinking about it (at least I can’t)! And you will be trying to figure out how soon these can be on the dinner table again.  The chicken that has been cooked in chili powder and garlic is marinated with the honey and lime juice to provide a sweet side to the somewhat spicy chicken. I saw this idea on Pinterest and it has really been a hit this week! It is a car wash in a 9×13 baking dish. All you do is put water and soap (like dawn) in the dish. Yes, it is a little bit messy but the kids love it  and has kept them busy when we cannot go outside due to it being rainy and very muddy. Read the rest of this entry »

I love coffee. I mean, really, really love coffee. As in, can’t live without it. There have been a few time I have had to stop drinking it and I’m sure I have not been pleasant in the mornings. At night, when I go to bed, I think about what my morning coffee is going to taste like. Is that weird?! I look forward to my morning cup of coffee. Oh! And I like it black. Dark and black. I love my coffee even more when I have something sweet to drink with it. How great is it that you can put “coffee” in front of a food and it makes it ok to eat for breakfast?
