I know a meal is good when my son is still talking about it at bedtime. And when he is asking for me to make it for dinner the next night. This meal is one of those meals. I had no idea how it would go over when I made it, but to my surprise, Stephen ate everything that was in it and Emma ate a few of the vegetables and the rice. I have made it several times and each time it is met when great enthusiasm! Which is good, because sometimes my children change their tastes in a matter of just a few days. One day they might like this stir-fry, but the next time I make it, they could turn their noses up at it. Thankfully, each time I make this, it is received will screams of joy (yes, really)!
The trick to making stir-fry’s is to have everything that is to go into the pan ready to go. That is to say, all of your vegetables cut and/or thawed, all of the sauce ingredients measured out and the chicken (thawed if needed) diced into small pieces. Once your pan is hot, then all you need to do is cook it, resulting in a very quick and easy dinner.
This dish is bursting with flavor. The citrus flavor and the flavor of the soy sauce and ginger is rounded out with the sweetness of brown sugar. The sauce coats the vegetables and chicken so that you get a great taste with each bite. This stir-fry is healthy! Yay! It is loaded with veggies and lean chicken breast. Most of the ingredients for the sauce, you probably already have in your pantry. If not, buy them, because this will be a meal you continue to make over and over.
