Here is a new way for you to serve tacos! I have been making these taco potatoes for several years now and they are so delicious. I love tacos (well, anything Mexican for that matter) but I get so tired of serving them the same old way. This recipe is so easy and quick. You can either bake your potatoes in the oven or you can nuke them the microwave. The taco meat mixture comes together quickly and then all you need to do is get your toppings ready. This has been a long week. Emma has had a double ear infection for over a week and Friday was really the first day she started acting like herself. So here is a bit of what went on despite the sickness.

Sunday was our annual Missions Parade to kick off our missions month at church. All the little kids dress up from other countries and then they march around the sanctuary. I forgot about it until we arrived at church. Thankfully they had lots of hats and little flags for the kids to use. So, Stephen is representing multiple countries with a sombrero and a German flag.

Almost every Thursday we go to Nan’s house for dinner. We enjoy seeing her and spending time with her. It was a beautiful spring evening so we enjoyed some fun outside!

This wreath looks so cute and easy! We sure do have enough boxwoods to make several of these!

A pork tenderloin was the hit recipe of the week. My kids gobbled it up. Stephen even requested it for breakfast and lunch the next day. I’d say that’s a win! I didn’t cook it per the directions, instead I used my new indoor grill pan. I’ve already used it for several things since purchasing it over spring break. I’m on the lookout for more recipes that I can use on an indoor grill. Let me know if you have a good one!

Do you have little kids who like to eat soft tacos? We love soft tacos in our house and eat them fairly regularly. After almost 4 years of holding my son’s taco for him while he ate (and mine getting cold) my husband suggested putting a rubber band around the taco to hold it together. This has worked wonders! My son can now hold the taco by himself and eat it without the insides of the taco falling all over the place! We keep an eye on him and push the rubber band down as needed. He loves it because he can be independent and eat dinner himself and I love it because I don’t have to hold it for him and have my taco get cold.

So the next time you have tacos, give this rubber band trick a try!

This week has been such fun! We were away to visit family in Cincinnati and had so much fun! Here are some pictures from the week.

We decided to take our 6 year old, 110 pound, golden retriever with us on this trip. Since we sold our car, we upgraded to a van and had plenty of room for him! Except, I wasn’t so sure how it would turn out when he ran away and my husband had to chase after him as we were try to load up the car. Thankfully, he was good and has been great the whole trip. We even had my brother who was along for half the trip to pick up his car from a previous trip.

Easter was such fun with the kids. They enjoyed hunting for eggs, showing off a pretty dress, and digging through the grass in the Easter basket. The last picture is my one of favorites. The kids are just patiently waiting as I try to get ready for church.

While in Cincinnati we have to have all of our favorite foods! Here are pictures of Skyline, Graeter’s, LaRosa’s and Smashburger! I make Skyline at home, but it’s so nice to get it in the restaurant. It’s no wonder my pants are tight. Cincinnati has some fattening foods! And Lynchburg seriously needs a Smashburger. It blows Five Guys out of the water any day.

Just as I am always on the lookout for new chicken dishes, I am also always looking for new side dishes. I don’t know about you, but side dishes seem to take a back seat to the main dish when I am planning my menu. I am so happy that I found this new potato recipe. It’s easy, full of texture, and oh so tasty! The ingredients are ones that I always have on hand, so adding these to the dinner plan is super easy! This quick and easy Stromboli is a family favorite. Until my husband and I got married, or at least were dating, I had never heard of it. Apparently it was a favorite of his and I needed to learn how to make it. I have changed this recipe a lot over the last 9 years. So much so, that I’m not sure it even resembles the original anymore. Apparently it’s pretty popular in Philadelphia, where he grew up. The few times I have visited there, I notice a lot of little pizza shops advertise “Stromboli” on their windows. We had such a fun week! Here is a little bit of what went on!

I’ve been caught! I set the lid to the powdered sugar down on our hot glass top stove (totally forgetting it was hot!) and burned a hole right through it. I put plastic wrap on top of the container and then put the lid with the hole on top of the container. Well, our kids figured out how to their hands into it and had a fun time spreading powdered sugar all over the kitchen and themselves. And the dog had fun licking it up off the floor!
