Carne Asada | Kathy's Kitchen Table My son was ecstatic when I told him we were having Carne Asada for dinner. Well, actually he looked at me like I was crazy and not really speaking English (which I wasn’t). I told him it was basically like a taco. He loves tacos. It’s probably right up there with spaghetti and pizza. So I told him it was like a taco, just with a different kind of meat. He was perfectly content with that description. Stephen celebrated his 5th birthday last week! It’s hard to believe, and yet it isn’t. Have you ever heard the saying, “the days are long but the years are short?” So true! Let’s start Monday out right and talk about Mexican food, shall we? I’m sure by now you have probably gathered that we love Mexican food. You can see examples of that here, here, here and here. Mexican flavors are so versatile. Sometimes I think I could eat Mexican food everyday of the week and not get tired of it. There are so many different ways you can fix it. These Honey Lime Enchiladas are the perfect example! This flavor combination will absolutely knock your socks off! You won’t be able to stop thinking about it (at least I can’t)! And you will be trying to figure out how soon these can be on the dinner table again.  The chicken that has been cooked in chili powder and garlic is marinated with the honey and lime juice to provide a sweet side to the somewhat spicy chicken. Here is a new way for you to serve tacos! I have been making these taco potatoes for several years now and they are so delicious. I love tacos (well, anything Mexican for that matter) but I get so tired of serving them the same old way. This recipe is so easy and quick. You can either bake your potatoes in the oven or you can nuke them the microwave. The taco meat mixture comes together quickly and then all you need to do is get your toppings ready. This is especially needed when we have to be somewhere around dinner time or when I need to be doing things with kids. Chicken Posole

This is one our favorite meals. My husband always gets excited when he sees that I have purchased a can of hominy from the store because he knows we are having Posole for dinner in the near future. I feel like Super Mom when I make this meal because it is so easy to just dump everything quickly into the slow cooker, it is loaded with vegetables, it’s healthy, and EVERYONE eats it! Another good thing? The only thing you need to do at dinner time for this meal is cook the rice. How easy is that? In my house, the hours of 4:00 – 6:00 pm tend to be a bit crazy so anything to make it easier when it comes to getting on the table is a big help.

As you can probably already tell, my family loves Mexican food. This dish is no exception. The original recipe (any many that you can find online) is a soup, but we like to serve it over rice. My kids tend eat most anything if it has rice under it! The posole is not spicy at all, but feel free to add green chiles to increase the spiciness.

Baked Chicken Taquitos

We love Mexican food in our house! I know when I fix a Mexican type meal, most everyone will eat it. This is one of those meals! These taquitos are creamy and full of Mexican flavors. And the best thing? They are baked and not fried. Any time I can serve my family a healthier version of restaurant favorite is a win in my book!

I have been making this meal for quite some time and have adapted it to fit our tastes. It is highly adaptable! If you need sides to serve with this make sure to check here. I usually serve the rice and black beans with this meal.

Cincinnati Chili

Have you ever lived in a city or town that is famous for a certain type or style of food? Have you ever moved away from that city craving the famous food? My husband and I moved away from Cincinnati over 7 years ago. While we cannot believe it has been so long, we still crave certain foods and flavors of that city. Cincinnati is famous for several food related items. Chili, Graeter’s Ice Cream and LaRosa’s Pizza being just a few. Since moving here, our local Kroger has started carrying the cans of Skyline. I just don’t think that is the same coming out of a can. Plus, we have also found pints of Graeter’s at Kroger! Now, if I could just figure out how to replicate a LaRosa’s cheese pizza at home I would be all set!

I have found over the years that if you are craving something that is usually from a restaurant, just make it at home! While this recipe is not exactly like the restaurant, it is pretty close. The flavors of Cincinnati Chili are as unique as the way it is served. There are no beans in this chili (although you can add them), the spices are not something you would find in a traditional chili and chocolate is even used! You serve this chili over spaghetti noodles and top the whole dish with shredded cheese. This is traditionally know as a 3-Way. If you want to add beans, feel free; that would be called a 4-Way. And you must serve this chili with Oyster crackers. It’s a rule.

Cheddar Cheese Veggie Soup

My family loves soup. I know that when I make soup everyone will eat it! And when you have two somewhat picky children, that is a blessing.

This soup comes together very quickly. I have found that if I chop the veggies up in the morning this is such an easy dinner to bring to the table. And when kids are running around and being crazy just because it is that time of day, a quick and easy dinner is what I am looking for.

This is such a creamy, thick soup that is perfect for a cold night. I usually serve this soup with some type of roll but I decided to try it with the pretzel bites this time. Such a good decision! The cheddar cheese paired nicely with salty, buttery pretzel bites.
